What in the heck is a fig?
Get ready for me to rock your world: a fig isn’t just a fruit, it’s actually an inverted flower…they literally bloom internally. This is what gives the inside of a fig that crazy, alien-like look. DO NOT BE AFRAID, figs are so good and are packed full of fiber. Once they’re ripe, they’re sweet and juicy (almost like eating candy). If we’re being honest here, figs used to freak me out. My Mom would legit drool over them when they’d start to bloom and I couldn’t get behind the phenomenom. Boy was I wrong…
To ease you into a fig-crazed lifestyle, we’re starting with pizza because what ISN’T good on pizza? Pair this with the salti-ness of prosciutto and the creamy mozzarella and you will never doubt the beauty that is in a fig. Good news: this is e-a-s-y, so whether you’re cooking solo or trying to impress your lover…you. are. welcome.
P R E P
Unless you are keen to make homemade dough, I’d recommend snagging some pre-made dough at your local grocery store. This will save you time and quite frankly, energy (therefore more time to drink wine, right?). Other than getting your dough rolled out and slicing the figs and mozzarella…the prep is done and done.
What you’ll need
- A rolling pin. A bottle of wine works too…
- Flour. This is just so the dough doesn’t stick to your table!
- 1 cookie sheet or pizza stone. If using a cookie sheet, spray with pam.
- Dash of salt and pepper.
- 1 bag of pizza dough. My favorites are from Whole Foods and Trader Joe’s.
- 1-2 tablespoons of olive oil.
- 8 oz mozzarella cheese, sliced into 1/2″ rounds. Pro tip: buy the log of mozzarella that is already pre-sliced to save you time. My favorite is the Galbani Mozzarella Fresca.
- 5-10 figs. You choose how many you want depending on your love for figs! You can typically buy these at your local grocery store depending on the season.
- 4 oz of Prosciutto, thinly sliced into strips.
- 3 tablespoons of balsamic glaze. This is key! You want it to be thick and syrupy, since regular balsamic vinegar will be too bitter.
Total Prep Time: 10 minutes
- Preheat oven to 400 degrees.
- Working with a large surface, sprinkle enough flour so that the dough won’t stick. You can always add more flour, so try not to go nuts.
- Take your dough out of the bag and, using a rolling pin (or wine bottle!), slowly roll out your dough until it’s stretched out enough. This definitely doesn’t have to be a perfect! Transfer to your cookie sheet or pizza stone.
- Spread olive oil over pizza until it has a light coating. Try not to drown your dough with oil, just have enough to coat the top.
- Place slices of mozzarella on your dough, not quite touching each other.
- Place fig slices between the cheese, and then sprinkle with a little salt and pepper.
- Place pizza in the oven and cook for about 10-15 minutes, until the cheese is nice and melty and the dough is golden.
- Remove pizza from oven and place your prosciutto slices on top.
- Drizzle with balsamic glaze before serving. Enjoy!
