3 Ingredient Creamy Polenta

Perfect addition to Short Ribs!

Ohh the flavor and creaminess of this bomb Polenta will make you a true believer in everything that is Polenta. If you’re not a fan, I feel ya. I lean more towards mashed potatoes if I’m making a side dish, and something about corn meal and water just doesn’t sound appetizing. But I’m here to tell you, this Polenta was the BEST addition to my Short Ribs recipe (find it here: Basic Short Ribs and Creamy Polenta), and was the perfect consistency and flavor-packed side dish that it has changed my mind and attitude completely.

As a heads up, this took about 40 minutes to make and I was not expecting it to take as long as it did. You’ve been warned! This is perfect to make while your Short Ribs are cooking, and with it only being 3 ingredients (not including the water), it’s easy!

What you’ll need

  • 1 medium sized saucepan.
  • A little less than a cup of cornmeal.
  • 4 cups of water.
  • 4-5 oz of Goat Cheese.
  • 2 tablespoons of butter.

Total Prep Time: N/A.

Total Cooking Time: 30-40 minutes.


  • Bring 4 cups of water to a boil in your medium-sized saucepan.
  • Slowly, very slowly, pour the cornmeal in. Using a whisk, continue to stir so that the cornmeal doesn’t get lumpy.
  • Lower heat to a simmer, and continue to whisk every 5 minutes or so for the next 30-40 minutes. The consistency should be thick.
  • Once the Polenta has thickened, add in butter and goat cheese. Stir to combine.
  • Place Short Ribs on top, and serve hot!


I’m still cracking up @ myself because 1) I literally took zero photos because I was so hungry, and 2) because I was v impatient with how long this took. For whatever reason I assumed this would take 10 minutes and so I had my Ribs patiently waiting and smelling up the kitchen with all the good smells while this took an extra 30 minutes. Rookie mistake! Keep that in mind, but the good news is that the Ribs take awhile to cook regardless so you can make this while the Ribs are in the oven, and then just reheat when it’s all ready.
